- Birdy's Bakery and Patisserie Sets Ambitious Expansion Goals with 100 New Stores via franchising
Founded in 1992 and originally part of the Taj Group of Hotels, Birdy’s has long been a trusted name in Mumbai's bakery scene. In 2019, ownership transferred to Grill Splendour Services Pvt. Ltd., a gourmet bakery chain led by Srinidhi and Vandana Rao. Under their leadership, the brand has been revitalized and now operates 26 stores across Mumbai, with four additional stores set to open within the next month.
The brand's journey has seen significant investment in infrastructure, including a new kitchen in Wadala, which started operations in February 2020. Despite challenges brought on by the pandemic, Birdy’s has steadily increased its revenue, reaching Rs 13.5 crores in FY24, although this figure was impacted by the slowdown in the retail industry.
“Looking ahead, Birdy’s aims to become Mumbai's largest bakery and patisserie chain by FY26. We are looking at spreading our wings pan-India and are seeking franchise partners up North especially,” confirms Vandana Rao, Chairman, Birdy's Bakery and Patisserie.
The company is also focused on expanding its product offerings to include wellness items like gluten-free, vegan, and sugar-free options. With a blend of traditional values and modern business strategies, Birdy’s is poised to navigate the competitive landscape of Mumbai’s bakery market.
In addition to physical stores, Birdy’s is leveraging online sales through platforms like Swiggy and Zomato, which currently account for 35% of its revenue. This multi-channel approach allows Birdy’s to reach a broader customer base while experimenting with various store formats tailored to different locations, from high-street shops to experiential bakery cafes.
As Birdy’s continues to grow, the brand remains committed to maintaining product consistency and quality, even as it explores the possibility of expanding into other cities through local franchise partnerships. This strategic approach reflects Birdy’s ambition to be not just a bakery but a beloved part of Mumbai’s culinary heritage.
